Banana Choc Chip Loaf

In a Nutshell:

Awesome snack option, easy to make Banana Loaf.

Ingredients:

  • 13/4 cup wholemeal flour
  • 1 tsp ground cinnamon
  • 1 tsp bicarb soda
  • 1/2 tsp salt
  • 2 eggs
  • 1/3 cup olive oil
  • 1 tbsp warmed honey
  • 1/4 cup Greek yoghurt
  • 1 tsp vanilla extract
  • 3 very ripe medium bananas, mashed
  • 1/3 cup dark chocolate chips
  •  
  • Prep time: 10 mins
  • Cook time: 50 mins
  • Serves: 12 person

    Steps:

    1. Preheat oven to 160°C and grease a loaf pan.
    2. Combine flour, cinnamon, bicarb soda and salt in a medium bowl and set aside.
    3. In a large bowl, beat eggs, oil, honey, yoghurt and vanilla for 2 minutes. Gently stir in bananas and chocolate chips and then combine with the flour mixture.
    4. Pour batter into pan and bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes before slicing.
